Pumpkin Rice Noodle is a really traditional Taiwanese dish. The main ingredients includes:
1. Rice noodles: which can be bought from T&T;
2. Pumpkins: shredded, whether to skin them is optional;
3. Carrots: shredded, whether to skin them is optional;
4. Ground meat: I used ground beef here, clams or dried mushrooms are used in some other recipes;
5. garlic;
6. salt;
7. sugar.
How to cook?
1. put rice noodles into a pot of cold water;
2. fried the garlic with ground beef;
3. cook shreded pumpkin and shreded carrot with water till they soften;
4. add 2 into 3;
5. add 1 into 4 (without the cold water, just dump the rice noodles in);
6. season with salt and sugar;
7. ready to serve!
